Stamatios Giannoukos: Investigating nutritional insights via mass spectrometric breath metabolomics

Online breath analysis using secondary electrospray ionization-high-resolution mass spectrometry (SESI-HRMS) is a highly sensitive and selective tool for untargeted metabolomics and biomarker discovery, valuable in clinical research and nutritional science. This presentation covers recent advancements in human exhaled breath metabolome analysis in the context of nutrition (NutriExhalome), including improved method softness, enhanced sensitivity, and quantification of volatile nutritional biomarkers. It highlights the importance of real-time breath analysis with SESI-HRMS, focusing on the impact of specific nutrients on postprandial metabolism and the exhalome.

Stamatios Giannoukos is an expert in analytical chemistry, he specializes in mass spectrometry (MS) and ambient ionization techniques for chemical analysis, focusing on real-time breath analysis, environmental monitoring, and exposure assessment. He has developed MS methodologies for applications in homeland security, forensics, agriculture, and environmental science, contributing to two commercial portable mass spectrometers. He is a Senior Scientist and Lecturer at ETH Zurich, a former PSI-Marie Skłodowska-Curie Fellow at the Paul Scherrer Institute and also a consultant and entrepreneur with a strong research record in EU and UK projects. He holds an MSc in Chemical Engineering from NTUA (Greece) and a PhD in Electrical Engineering and Electronics from the University of Liverpool (UK).
